Balsamic Onion Galette

Can you believe that after this past year in Culinary School I have never even attempted to make a Galette?!?! What is wrong with me? I was seriously missing out!

Maria, from Two Peas and Their Pod, and I were discussing what we wanted to make for this Friday and we figured that a galette is the perfect simple dish for a savory appetizer or side dish or a sweet dessert! We decided make both a sweet and savory galette. I chose to make a simple Onion Galette with red onions that were reduced for about 10 billion hours and then finished with balsamic vinegar. Maria made a Cinnamon Apple Galette! So pretty much all we need are some forks and we have ourselves a nice little meal!

The pastry crust is simple… we both used the following recipe (with some minor variations because one was sweet and the other savory:

Balsamic Onion Galette

  • 1 cup flour
  • 1/2 tsp sugar
  • 1/2 tsp salt
  • 6 tbsp butter, cold cubes
  • 3 1/2 tbsp cold water

In a food processor combine the flour, sugar and salt. Then add the butter cubes and pulse about 10 times. Then while pulsing add the water until the dough starts to stick together just a tad. Remove the dough from the processor onto a piece or parchment paper. Form it into a disc and refridgerate for 1 hour.

For the savory filling you will need:

  • 2 red onions, slices
  • 2 tbsp olive oil
  • salt
  • 2 tsp balsamic vinegar
  • Goat cheese
  • Parmesan cheese

In a large skillet, heat the oil over medium heat. Add the sliced onions and saute for about 1o minutes. Season with salt. Turn heat down to medium low and let the onions cook for about 25 minutes while stirring occasionally. Once carmelized, add the balsamic and let reduce for 5-10 minutes. Remove from heat and let cool.

Meanwhile, preheat your oven to 450 degrees. Remove your dough from the refridgerator and roll out into a 10 – 12 inch disc. Place a handful of parmesan cheese onto the center. Add the onion mixture on top and scatter a few crumbles of goat cheese. Fold the dough up on the sides.

Bake at 450 degrees for 12 minutes. Then reduce the heat of the oven to 350 and bake for 25 minutes longer until golden brown. Remove and serve!

I can speak from first hand experience – this tastes delicious! I have never had a galette before, but bring them on! Fabulous photo as well – it tastes as good as it looks.

I must try this and I mean now. I made a sweet galette on Friday and it did not come out as well as it could have. I know what I did wrong.

I need to make a successful one or I won’t make galettes anymore.

That sounds so delicious, especially with the goat cheese – looks gorgeous too!

I was just wondering why I hadn’t seen anything in my reader from you in a while, and then I remembered that your site moved. I’m getting errors trying to subcribe here, but I’ll keep checking back! Missed your recipes!
