Burrata and Proscuitto Flatbread

I am a sucker for all things Burrata. I especially like it within the first 24 hours of making it. Its rich and buttery and the creamy inside is irresistible! I eat it on a piece of baguette, or on pizza, or on a spoon. Any way you serve it, I can pretty much assure you that its going to be a very satisfying experience.

I recently picked up some fresh Burrata from my favorite Italian deli in Santa Monica, Bay Cities. They make it fresh daily and it’s always a special treat when I bring it home. I decided that what better way to use this than make a pizza/flatbread. (That is after I ate at least 3 tbsp of it plain… on a spoon… with some truffle salt!) Paired with homemade basil and spinach pesto and super thinly sliced prosciutto this was the most delectable flat bread to ever come to life on my pizza stone.

Burrata & Prosciutto Flatbread

Ingredients:

1 quantity pizza dough
1 cup basil spinach pesto (recipe below)
4 oz thinly sliced prosciutto
1/2 – 3/4 cup fresh burrata
2 tbsp olive oil
salt and pepper
1/2 cup corn meal

Directions:

Spread your corn meal onto your pizza peel and then stretch the dough into a large circle or oval shape. Drizzle the olive oil onto the dough and spread it around with your hands. Transfer the dough into your 500 degree preheated oven and onto your pizza stone. Par-bake for 6 minutes and then remove from oven.

Add spoonfuls of the pesto on top of the dough and then add the Burrata and prosciutto. Place the pizza back into the oven and continue to bake for 6 more minutes.

Remove from oven once baked, season with salt and pepper and enjoy.

Basil Spinach Pesto

Ingredients:

2 cups basil
1 cup fresh spinach
1/2 cup pine nuts
2 cloves garlic, peeled
1 lemon, zested and juiced
1 tsp salt, plus more for taste
1 tsp pepper, plus more for taste
1 cup grated Parmesan cheese
1/2 cup olive oil

Directions

Combine all ingredients except the olive oil in a food processor and pulse to combine. Steam in the olive oil and then set aside.

You have fresh burrata where you live? I’m jealous. I spent a few weeks in Italy last summer, I think I had burrata every day.
