Culinary School – Week Eighteen – Advanced Pasta and Pizza

This week at Culinary School was by far one of my favorites!!! We made pizzas, pastas, polenta and risottos! Carb heaven :) They should have sent an email saying UPDATE: COME TO CLASS WITH AN EMPTY STOMACH

Most of you know that I am a pizza lover… I make pizza at least once a week and it all started when I got my first pizza stone and peel from my boyfriends parents. (love them!) Check out some of my past pizza creations!

Chef made this one as it is one of her favs from Spago… a Smoked Salmon Pizza with red onions, creme fraiche and topped with caviar!


Here is another one with shrimp and tons of roasted and grilled vegetables and my favorite goat cheese

Wild Mushroom Risotto… LOVED THIS!!


Seafood Saffron Risotto. The color is beautiful but just a word of caution… don’t use too much saffron! The color might be vibrant but the taste becomes a bit metallic.


This Asparagus Risotto was the perfect consistency!


Back to pizzas…. This Shrimp and Prosciutto Pizza was perfect… each bite was packed full of complimenting flavors and healthy veggies too.

This was Kaymie’s pizza… I freaking love Kaymie… she is such a fabulous friend and seriously is ALWAYS wearing a smile on her face! Packed with shrimp, pesto, and tons of buffalo mozzarella… this was one of my favorites.


Anything with goat cheese is good in my book!

Moving on to pasta….

We made these fabulous Agnolotti…


and more Agnolotti…


and Ravoili packed with a chicken stuffing…

All the pastas are currently sitting in the freezer waiting for us to come back next week and finish them with sauces and such. Since next week we are focusing on advanced pasties it will be really nice to have something savory too!

This Polenta Terraine is made up of 4 cheese polenta, spinach polenta and wild mushroom polenta. Delicious!


Lastly, Gail made this dessert and it was so amazingly delicous and decadent… we all looks liked gluttons eating this.

These sweet Pate a Choux were filled with 4 different types of ice cream or gelato… the blood orange gelato was my fav… and then topped with a homemade chocolate and raspberry sauce.


It was sinful…
and I loved every second of it!

I think I would love that pizza with the shrimp, roasted veggies, and goat cheese. And the ravioli looks delicious. I made my own once and I keep meaning to get around to making more. It looks like you're having so much fun.

Look at all these delicious pizzas and pastas! I would especially love the Agnolotti and polenta! Yum!
