Culinary School – Week Fourteen – Puff Pastry

This week at Culinary School we focused on Puff Pastry and all its uses! In order to prepare we each had to make our own puff pastry, with 6 turns, at home… which is not a quick and easy process! It requires a lot of time and work but homemade puff pastry is significantly better than the store bought! Everything we made was really delicious…

Filet de Truite en Croute, or Trout with a Salmon and Scallop Mousse wrapped in Puff Pastry was served with a classic Buerre Blanc

Here is the whole fish, fins, gills, eye and all… so cute huh!

Smoked Turkey, Cheese and Pepper Pithivier aka the most fabulous dish ever made in puff pastry. This would be a perfect dish to serve at a bunch for a large party!

Just look at all that fabulous cheese along with bell peppers, Dijon mustard and some freshly grated horseradish.

Poulet Aux Champignon En Croute, also known as Chicken with Mushroom in Puff Pastry. The classic dishes are almost like a pot pie.

The inside is full of chicken and all sorts of mushrooms like Shiitake, Morelle, and Portobellos.

These savory puff pastry sticks were seasoned with Cardamom, Lemon Zest and Sugar in the Raw.

These free form plum tarts are gorgeous and so tasty with an Almond Cream on the bottom of the dish.

This apple tart was served with slivered almonds and a homemade caramel sauce! So delicious!

Lastly these cookies were just flat out amazing!!!

Coming up we will be focusing on Appetizers, Wines and then we will move onto the 3rd and last section of Culinary School, Advanced Cuisine.

These all look gorgeous. Great job! I'd love to eat the plum tart with the almond cream… and that fish is just too cute!

whaou I am amazed! I stillhave to learn how to do it! You did a REALLY nice work. The fish is just great. And yes I have tried come homemade puff pastry it is definetly much better than the ones you can buy!
