Culinary School – Week Seven – Soups and Sauces

Oh man was school good this week! We made a ton of fabulous soups and then the 5 mother sauces to taste with different kinds of meat. And some of the best news… I got home from school before 2am that is almost a miracle in itself! Since it is a night course we typically don’t finish until 1 or 1:15ish and last night we got done at 12:30am!!!!! Here is what we made….

Bouillabaisse with Aoili on crostini hidden below the fabulous broth! Okay this soup was drop dead delicious. Filled with tons of shrimp, sea bass, John Dory, Sole and crab meat. The broth is made up of fish stock, onion, leeks, garlic, tomatoes and thyme! It is a perfect dish to entertain with and I will be making this again asap!

Cream of Mushroom Soup – this was amazingly delicious.
Onion Soup Gratinee… aka French Onion Soup. My fav of all times… the cheese was just spectacular… I mean look at all that goodness :)

Puree of Carrot Soup… so tasty!

Corn and Crab Chowder with twisted cheese puffs.

We seared and roasted both lamb and turkey to try with the 5 mother sauces. From left to right you can see a basic Hollandaise, Espagnole, Veloute, Tomato Sauce, and a Bechamel. They were all delicious… some tasted better with certain meats than the others. However since they are all Mother sauces they can be used with any kind of meat.Next week is Vegetables, Herbs and Exotic Fruits!! woohoo… I can’t even wait! And after that we have even more exciting things like fresh pasta, classic desserts and WINE TASTING!!!!

culinary school looks like a lot of fun! I mean you get to cook and eat what you made you can’t beat that :)

the french onion soup looks awesome, I’m digging all of that cheesy wholesome goodness!
