Last night, while it was about 100 billion degrees in Malibu, I did a dinner party for my clients. I was running around like a crazy woman trying to get 9 things done all at once and still make sure that everything I put out is beautiful. Its a tough job to be a personal chef. Standing in front of the stove all day, cooking cooking and more cooking. But it is totally worth it when at the end of the night your boss tells your that it was one of the most amazing dinners he has ever had!!!
I love being a personal chef. I literally have the most amazing bosses in the whole wide world who are seriously some of the most fabulous people I have ever met! They make my job easy because being around them is such a pleasure. On nights like last night when there is a big dinner party about to arrive and I only have 4 hours to make braised lamb shanks, appetizers, a salad, 4 side dishes, mushroom risotto, cocktails and 2 desserts (both that require homemade doughs) but I still need to wow everyone with all things coming from the kitchen, I always roll up my sleeves and pull out some tricks like this really simple focaccia!
Its just a plain focaccia recipe that I have adapted over the years from Culinary School. Once its proofed, baked and cooled, I top it with whatever I have lying around. Yesterday it happened to be goat cheese, cherry tomatoes and basil, but you could do caramelized onions, mozzarella, vegetables… really the possibilities are endless!

This looks like the perfect dinner on an evening that is a billion degrees! Send some of that warmth this way! It is amazing, but I do have tomatoes ripening, even in this weather. This would put them to great use. I have never tried to make my own focaccia…perhaps it is time.
