Kale Cucumber Pineapple Smoothie

Super crazy good for you smoothies? Sign me up!

Like I said on Monday, I’m all about the super foods like kale. Yup, I’m probably eating so much kale that my skin is going to turn a slight shade of green, but whatever, at least I’m getting my daily intake of fruits and veggies.  No bid deal.  Right?

So by now I think you all know that I’m crazy into juicing. I just love it. I feel great. I see everything more clearly. And I mean that in a literal sense, not some metaphor or anything. Like, I literally wake up in the morning and everything is clear. It takes me about .02 seconds to get out of bed and I’m immediately awake. There’s no lolly-gagging around for me. I’m up and I’m ready to go! And it’s seriously all because of my daily green juice! I like drinking my greens. It’s the way to go.

I decided to mix things up a bit and make myself a green smoothie for lunch this week. Holy yum. It was epic. Get this… cucumbers + kale + pineapple + raspberries. Yup that’s it. Add a touch of ice and a little bit of water to get things moving around in the blender and then you’re ready to take on the rest of the day. Throw in a cute straw when you’re drinking it too. It makes it taste even better. Well, maybe not. But at least you look good while you’re drinking it!

Cucumber Pineapple Smoothies are quickly becoming my go-to when I’m in a hurry. They are filling and I’m getting tons of my daily fruit and vegetables in one drink! And… you don’t even need a juicer for this recipe! Just a good blender. And a fancy straw. Clearly.

Cucumber Pineapple Smoothie

Ingredients

  • 1 cup freshly cut pineapple
  • 1/2 cup fresh raspberries
  • 1-2 leaves of kale (any kind of kale will work)
  • 1/2 English cucumber, peeled and roughly chopped
  • ice
  • water

Instructions

  1. Combine everything into your blender with 3-4 ice cubes and a touch of water. Blend.
  2. Add more water if needed to get things moving around in the blender.
  3. Drink up!

Sounds SO good! I had a tooth taken out yesterday and have been chowing on the smoothies with frozen fruit and greek yogurt, but am thinking it’s time to throw some green smoothies into the mix, and make smoothies a regular part of my usual healthy diet! :)

Fun idea! I’ve been trying to eat more kale (I read it has the most nutrients per calorie of any plant!), and this looks like just the way to do it. Thanks!

All kale all the time! But Pineapple, ok now I’m in. I think I read something about pineapple being the #1 best food you can eat?

Just made this yummy smoothie. Didn’t have raspberries, so substituted frozen strawberries and left out the ice instead. Even my husband loved it and was trying to guess what it was made with. Never guessed any of the ingredients, not even the kale. He thought it tasted like kiwi, banana, mango, and celery. lol
