I guess I have been bitten by the baking bug! I have been baking up a storm – which in turn makes my kitchen a sauna – but nothing that can’t be fixed with a quick jump in the pool!
As a kid I used to eat those double chocolate chip muffins from Costco like it was my job. You know the big huge ones they have in the bakery – don’t deny it – you know what I am talking about! I would eat 1/4 a muffin for breakfast every morning (healthy right?) but I was never much of a breakfast person so these sweet treats were the perfect thing for me! Anyways… I decided to to make my own version of those muffins just for fun and add marshmallows… because marshmallows are awesome.
- 2.5 oz butter
- 2 cups flour
- 6 tbsp cocoa powder
- 3 tsp baking powder
- 3/4 cup sugar
- 1/2 cup chocolate chips
- 1/2 cup marshmallows
- 1 egg, beaten
- 1 1/4 cup skim milk
- Line a cupcake tray with cupcakes liners and preheat the oven to 375 degrees. Melt the butter.
- In a bowl combine the flour, cocoa, baking powder, sugar, chocolate chips and marshmallows. In a large mixer whisk the egg, milk and melted butter. Slowly add the flour mixture until completely mixed. This will form a stiff batter. Divide the batter evenly into the 12 cupcake liners. Bake for 20 minutes. Remove from oven and cool on a cooling rack.
