Mexican Turkey Burgers with Pico de Gallo

There is not a week that goes by that I don’t have guacamole! I love it and if I was deserted on an island and could only pick one food to have with me it would definitely be guacamole!! So this week I wanted to make some burgers to go along with some chips and guac. What I finally settled on was a Mexican style turkey burger with fresh pico de gallo. I really like using ground turkey because it has a really low amount of fat – but if you wanted to use ground beef that would work here too.

Here is what you need for the burger:

  • 1 pound turkey
  • 1/2 onion – chopped
  • 2 cloves of garlic – minced
  • 1 tsp chili powder
  • 1 tsp cumin
  • fresh parsley
  • salt and pepper

Combine all these ingredients together and then form 4-6 burgers. Cook each burger for about 6 minutes on each side on a grill pan over medium high heat. Place a little cheddar cheese on top and then these are good to go.
To make your pico de gallo you need:

  • 3 medium tomatoes – chopped
  • 1/3 onion – chopped
  • 2 cloves garlic – minced
  • 1 lime – juiced
  • 1/2 cup fresh cilantro
  • salt and pepper to taste

Chop, minced and juice these ingredients and then combine them together and mix.
Whip up a quick batch of guacamole and you are ready to eat! I am off to Santa Barbara for the weekend to see my wonderful parents (I am so excited) so I will bring back from fabulous food finds!

Oh Gaby, these look so yummy! I adore guacamole too – and all things mexican – and this looks like a healthy treat! You’re making me hungry!
