Spicy Broccolini Pizza

You know what my absolute favorite veggie is in the whole wide world. Broccoli. And it can’t just be regular steamed broccoli. I need roasted broccolini with charred edges so it has a little crispness to it with every bite. And you know what is even better than roasted broccolini… Spicy Roasted Broccolini Pizza. Yup. It’s perfection. Add in a little pepper jack cheese, a few red pepper flakes for some extra kick and a pesto sauce rather than a pizza sauce, and you have one awesome pizza that is ready for dinner!

I’ve been knee deep in work, wedding planning and getting ready for the holidays, and there seriously is nothing better than a homemade pizza at the end of the day to calm things down a bit. Trying to decide on wedding colors, honeymoon locations, bridesmaid dresses and flowers seems way more complicated than throwing together a new flavor combination for my favorite kind of weeknight meal, pizza :)

Here’s the recipe for this awesome pizza:

Spicy Broccolini Pizza

Prep Time: 5 minutes

Cook Time: 15 minutes

Total Time: 20 minutes

Yield: 1 pizza

Serving Size: 2-4 people

A spicy pizza with roasted broccolini

Ingredients

  • 1 package store bought crust
  • 1/2 cup pesto
  • 1 1/2 cup pepper jack cheese
  • 1 - 2 tsp red pepper flakes
  • 1 bunch broccolini
  • 1 tsp olive oil
  • salt and pepper to taste

Instructions

  1. Preheat oven to 475 degrees F.
  2. Place the broccolini on a baking sheet. Drizzle with olive oil and toss to combine. Roast in the oven for 7-8 minutes until the edges are just starting to brown. Remove and set aside.
  3. On a large baking sheet, roll out the prepared pizza dough. Slather on the pesto sauce, pepper jack cheese, red pepper flakes and then top with the broccolini.
  4. Place the pizza into the oven for 10-12 minutes until the cheese begins to bubble and the crust is fully cooked. Remove from oven and season with salt and pepper. Let cool slightly and serve.

I’m wedding planning as well! When is your wedding? Fortunately, ours isn’t until October- so we have plenty of time. But yes, it can definitely be a little stressful and pizza sounds great. My fiance, Sam, also loves roasted broccolini. We sometimes sprinkle it with Bacon Salt- and it’s amazing (if you like the flavor of bacon)! Great blog, I look forward to reading more!

This sounds delish…I love broccoli on a white pizza and I love that you have pesto on here, too. I have gotten into this thing where I cannot eat pizza that isn’t spicy…so this is right up my alley!
