For my birthday a few weeks back I got an ice cream maker… and it is beautiful. I have made my own ice cream before in Culinary School and now I get to make it whenever I want at home! For my first attempt by myself I chose to make something simple… Fresh Strawberry Ice Cream with Oreos and Chocolate Chunks.
- 3 cups fresh strawberries, stemmed and sliced
- 4 tbsp fresh lemon juice
- 1 1/2 cups sugar
- 1 1/2 cups whole milk
- 2 3/4 cups heavy cream
- 2 tsp pure vanilla extract
- 10 oreos, smashed
- 1/2 cup chocolate chips
- In a small bowl combine the strawberries and lemon juice and 1/2 cup of the sugar. Combine ingredients and let sit for at least 2 hours. Strain the juice and reserve. Puree the rest of the berries and set aside.
- In another bowl combine the milk and remaining sugar until fully dissolved. Stir in the heavy cream, strawberry juice, pureed strawberries and vanilla. Turn the ice cream machine on and pour the mixture into the freezer bowl. Mix until thickened, about 25-30 minutes. 5 minutes before it is done add the mashed Oreo cookies and the chocolate chips. Once done you can eat immediately or freeze for a firmed consistency.
