Stuffed Baguette

Sandwiches, panini’s and wraps are kinda my favorite foods when it comes to lunch. They aren’t messy, they are great warm or cold and they are quick and painless to make. Lucky for me I am always home during lunch so I can whip up something in no time flat and enjoy a healthy lunch while twittering with my fav foodies!

The other week, the boyfriend and I went out for lunch and he had a stuffed baguette. It was pretty amazing… and the concept was so simple. Just a hallowed out piece of baguette stuffed with your favorite fixings on a sandwich. He pretty much wouldn’t stop talking about it until I promised to make one so being the ever so fabulous girlfriend I am… I made them for lunch the other day!

There isn’t a set recipe for this… just trust your instincts! All you really need is a fresh baguette, cut into 8 inch pieces, which you can hollow out with a spoon, and then just stuff it with your favorite things. For this one I used, avocado, cooked ground turkey meat, cheddar cheese, pepperjack cheese, sauteed yellow and green bell peppers and raw red onions. Once you stuff the inside of the baguette, put it onto a baking tray and sprinkle the top with parmesan cheese to act as a glue. (I mean seriously people, you wouldn’t want all that goodness falling out while you’re trying to eat!) Bake it in a 350 degree oven for about 10 minutes or until the Parmesan cheese starts to melt and turns slightly golden brown.

Voila! There you have it… its pretty much my new favorite lunch food and it is a total crowd pleaser! The kids will love them… boyfriends, girlfriends and husbands and wives will think your a genius… so pretty much you have to make them today. Ok fine… maybe tomorrow!

It is absolutely FREEZING here. This looks like a great reason to turn on my oven and have a warm lunch! Or maybe even a quick dinner! The photo of this baguette looks scrumptious! I especially love the visual of the ‘glue’!

Looks delicious and I bet it tastes wonderful! Parmesan as glue, one never stops learning…….
It’s hot and humid here, but I am sure I could eat it. We must be the 1/3 of the States, that is not getting hit by the storm.

yes – you sprinkle the end that you cut! Add that Parmesan and then it sticks like glue!
