I make a lot of pizza, and this week we decided to make an all veggie pizza… hence my very very veggie pizza.
It is packed full of flavor and is totally healthy!
Ingredients:
- Whole Wheat Pizza Dough
- Corn meal, for dusting
- pizza sauce
- 1/2 cup sun dried tomatoes, drained
- 1 zucchini, cut into thin rounds
- 1 cup mozzarella, shredded
- 1 cup cheddar cheese, shredded
- 1/2 cup red onion, thinly sliced
- 1 yellow pepper, thinly sliced
- 1 jar artichoke hearts, drained
To top the pizza… spread the pizza sauce over the dough leaving an inch border. Arrange the tomatoes and zucchini evenly over the sauce. Add the different cheeses and then evenly distribute the red onion, bell pepper and artichoke hearts over the cheese.
Place the pizza into a 500 degree oven and bake for 10-12 minutes until the crust turns golden brown. Remove and serve while hot. (Garnish with chopped cilantro if desired)

Enjoy!

I always add TONS of veggies to my pizza. I prefer more veggies than cheese and lots of fresh basil. Great photos!

I so love your pizza creations! Pizza Night is tomorrow but I don't know if I can wait that long now . . .

It looks delicious, Gaby. Well worth trying.
A pizza that's actually GOOD for you! Love it! The colors look amazing together too! Hum…maybe I can even convince my honey into eating veggies this way.
