Watermelon Agua Fresca

Agua Fresca is one of those things that I consider a nice little luxury. Its pretty much just water mixed with fresh fruit and it is downright amazing. Growing up in Arizona, my friends and I would hop in the car and venture to Mexico every once in a while and while we were there  we would have a refreshing Agua Fresca while laying on the beach… that might be one of the best summer memories ever.

This past weekend it was about 85 degrees here in Los Angeles so I whipped up a quick batch of Watermelon Agua Fresca with a touch of home-grown mint for me and my boyfriend. It was a perfect weekend treat. You can make Agua Fresca with really any kind of fruit… Strawberry, Raspberry, Cantaloupe, Honeydew etc… but trust me… you have to make it… its perfection in a cup!

Watermelon and Mint Agua Fresca

Ingredients:

4 cups cubed seeded watermelon
6 cup water
1/3 cup sugar
1/4 cup fresh lime juice
Splash of Sparking Water
Mint, Chopped for garnish
Lime slices, for garnish

Directions:

Combine half of the watermelon, half of the water and half of the sugar in a large food processor and pulse until liquid. Transfer mixture to a strainer and strain the mixture into a large container and disregard anything that won’t strain. Repeat process with the remaining watermelon, water and sugar. Once the entire mixture has been strained, ad the lime juice and refrigerate for at least 2 hours.

When ready to serve, add a lime wedge if desired and just a splash of Sparkling water.

This is the perfect way to cool down during the summer. And what I love most about agua frescas is that you can flavor them with what ever fruit you have on hand. Yours looks perfect.

My favourite summer drink is a raw mango one, sweet, tangy and a little spiced up. The other one is a mint sherbet…. oooo… have to make it this weekend and do a post on it :)
