MondaySkillet Chipotle Enchilada Bake – my favorite dinner because everything gets piled into one skillet and you get to call it a day. PLUS it’s perfect for leftovers the next day for lunch!

TuesdayChicken Tawook Quinoa Bowls! One of my favorite meals of all times.

WednesdayPea Prosciutto Spring Pizza with a Green Monster Side Salad because PIZZA NIGHT and spring is coming!

ThursdayLinguini with Clams because I dream about this on the regular! It’s one of those 15 minute meals and you can’t go wrong. Sub in mussels for the clams if that’s more your thing. Or ditch the shellfish entirely and do some shrimp or chicken!

And for some make ahead breakfast items this week – I made Homemade Granola Bars and I’ll serve ’em up with a bit of greek yogurt!
