We’re back for week 9 of making your lives way easier with another of a meal plans! It’s your one stop shop for dinners! And if you’re like me, you’ll have the leftovers for lunch the following day and then all you have to think about every morning is breakfast - JACKPOT!

Sunday - It's Sunday and these Chicken Parmesan Meatballs and some spicy garlic green beans should be on the agenda. If you want to make a loaded power salad for the week ahead... be my guest!

Monday - Chuck Roast Tacos are happening and we'll make tacos or taco bowls with them!

Tuesday -  Chicken Enchilada Bake! My mom used to make this for us as kids and I'm still obsessed, even today!

Wednesday - Baked Lemon Cod - seriously could NOT be easier! Plus throw some Brussels and roasted carrots on the plate and call it a day! PS - this was the first fish I ever learned how to cook. Cod is super forgiving so if your a fish newbie, this one is for you!

Thursday - Shawarma Bowls for the win!! You don't even need a side dish - it's a main course and a side dish all rolled into one!

Friday night we're having friends over for a Tagine Night!

A little sweet something something for when the sweet tooth strikes....Double Chocolate Studded Banana Bread

and if you want to prep a little bite for breakfast this week how about some Homemade Granola Bars!

  1. Made the granola bars for my kids breakfast for the week. Had. Little taste and wow! Adjusted to my liking: low on butter so I used coconut oil. Used cashews, added coconut (toasted with cashews & Oats) omitted dry fruits. Such an easy recipe. A good grab on a busy morning especially for my kiddos! Will make for my vegan sis in law by using maple syrup instead of honey!
