Winter White Chocolate Mix

Mix is another one of those family favorites in my house. Growing up there was rarely a month that went by when my mom didn’t make this fabulous recipe. After leaving home and heading off to college I would seriously crave this sweet treat all the time! It wasn’t until recently that I started making it myself… partially because I had never had a bowl large enough to hold all the ingredients. But… after Culinary School that all changed. I now have a huge giant bowl that can hold all the ingredients plus have enough room for me to mix in the best part of it all… the White Chocolate!

This White Chocolate Mix is the perfect snack food or a light dessert! It is easy to grab and take on the go when your on the road or need something quick to satisfy a sweet tooth. The recipe isn’t all that complex but the finished product is heavenly. I make a huge batch of this and put it in ziplock bags and store them in the freezer for when my sweet tooth strikes! Not to mention this month is really all about the snacks, the cookies and the treats! Maria, from Two Peas and their Pod, and I are totally into the treats – and this week we have two fabulous ideas for you!

Winter White Chocolate Mix

Ingredients:
3 Cups Cheerios
3 Cups Rice Chex
3 Cups Wheat Chex
1 Cup Pretzel Sticks (the skinny ones)
2-3 Cups of White m&m’s (ok so really you can use any m&m’s you want but I was feeling very festive this time and wanted to stick with my winter wonderland white theme!)
24 oz White Chocolate (plus an extra 4-8 oz if needed)


In a large bowl (or wok, or giant tupperware) combine the Cheerios, Chex, Pretzels and m&m’s. Mix them up a bit, making sure that everything is evenly distributed. Meanwhile, over a double boiler, melt the white chocolate according to the directions on the package. Once the chocolate has melted and is a smooth consistency, drizzle the chocolate over the cereal mix and combine with a wooden spoon. -Note- make sure to coat all the cereal with chocolate! If you need to melt the extra white chocolate to cover all the mix then go right on ahead!

Once the entire batch has been combined, lay it out to dry on a large sheet of parchment or wax paper. Let dry for 4 hours (or just long enough for the chocolate to harden and for you to take a few small nibbles). Serve immediately or package it up into large ziplock bags and store in the freezer.

    Still one of my all time favorites!! I LOVE the white M&M’s. I think the different color M&M’s are a good excuse to make this every month and call it a special occasion! The rice chex are my favorite, but you could add bran chex as well.

    Argh. My white chocolate didn’t get runny. It stayed goopy. Not enough heat? Too much heat? Maybe I’ll get it right next time.

      hmmm… that is very odd. You could try add a few tbsp of water into the pot before you add the chocolate. Heat it over super low heat on a double boiler for about 10 minutes. As long as the water from the double boiler isn’t touching the top of the double boiler it won’t burn and you can just continue to stir it. You might also try using the white chocolate chips rather than big pieces of white chocolate! Let me know if this helps!
