hmmm… that is very odd. You could try add a few tbsp of water into the pot before you add the chocolate. Heat it over super low heat on a double boiler for about 10 minutes. As long as the water from the double boiler isn’t touching the top of the double boiler it won’t burn and you can just continue to stir it. You might also try using the white chocolate chips rather than big pieces of white chocolate! Let me know if this helps!

Argh. My white chocolate didn’t get runny. It stayed goopy. Not enough heat? Too much heat? Maybe I’ll get it right next time.
