Stay with me guys - I’m about to change your life. BLT Guacamole. I know - you’re like bacon - yes, tomatoes - yes… but lettuce in my guacamole? Well, I’m here to tell you that it’s EVERYTHING!

I’ve made guacamole just about every which way over the past few years. Heck, I wrote an entire cookbook on it! But just because I’ve made it approximately 3 dozen ways doesn’t mean that I’ll ever stop. I’ll be dreaming up ways to use my favorite food (avocado, duh) for the rest of my life. This BLT Guacamole is the latest and greatest concept and I’m not going to lie to you - it’s epic.

I’ll admit, I was skeptical when I first thought of it. Lettuce in your guacamole… is it blasphemous? Well, I’m here today to tell you that it’s quite the contrary. It gives your guac that extra crunch plus an added hint of freshness. Tomatoes and bacon in guacamole are obviously the right move too. It’s perfection in a bowl.

Once you’ve got the guac situation under control you need ALL THE CHIPS.

Ingredients
  

  • 3 strips bacon
  • 3 avocados seeds removed
  • 2 baby romaine lettuce leaves halved, shredded
  • 1 small red onion finely chopped
  • 2 tomatoes finely chopped
  • 1 lime juiced
  • 1 lemon juiced
  • 2 tablespoons cilantro chopped
  • 2 tablespoons chives chopped
  • Kosher salt and pepper to taste
  • Garden of Eatin’ Grain Free Cassava Chips

Instructions
 

  • Cook the bacon. Drain on paper towel and break into small pieces
  • Roughly mash avocado in a medium bowl. Add in the lettuce, onion, tomato and bacon. Stir lime and lemon juice, cilantro and chives into the avocado. Season with salt and pepper to taste.
  • Serve with Garden of Eatin’ Grain Free Cassava Chips

Notes

This is not to be missed! Besides just dipping (and eating from a spoon??) this would be AMAZING as avocado toast.
