Blueberry Mint Lemonade

Blueberry Mint Lemonade is seriously so easy to make and it really is such a nice treat! Strolling through the farmers markets here in LA, you can tell that Spring is desperately trying to show up! I mean don’t get me wrong – it’s nice to have sunny and blue skies already – but I could use a little 80 degree weather asap! I’m an Arizona girl after all – and we don’t really do the “cold” very well.

So I’m thinking it’s time to start prepping for spring – because Spring means lots of fun parties on the beach, picnics in the park and just really cheery food and drink! This Blueberry Mint Lemonade is super quick to whip up and it’s a total crowd pleaser. Not to mention the color is gorgeous! All you need are some juicy Meyer Lemons (or regular lemons work just fine – I just used Meyer Lemons because my Meyer Lemon tree is going nuts and I have more lemons than I know what to do with!), a handful of blueberries plus some water and sugar. Doesn’t get much easier than that huh? You could also throw in a glug or 2 of Vodka if your serving it for a fun little cocktail party (which I fully intend on doing!)

Blueberry Mint Lemonade

Prep Time: 5 minutes

Total Time: 5 minutes

Yield: Serves 6

Blueberry Mint Lemonade

  • 1 cup of freshly squeezed Meyer lemon juice
  • 3/4 cup super fine sugar
  • 4 cups water
  • 1 cup fresh blueberries, stems removed
  • 1/3 cup fresh mint
  • 3/4 cup vodka (optional)

  1. Juice the lemons and transfer the juice into a large pitcher.
  2. Add the sugar and the water and stir to combine and dissolve the sugar. Add the blueberries and mint.
  3. Using an immersion blender, blend the mixture for about 20 seconds just until the mixture turns pink and the mint is finely chopped. Add alcohol if desired. Let the flavors sit for 1 hour and then pour the mixture into another pitcher through a strainer to remove the blueberry skins and mint leaves.

Another great cocktail, with or without alcohol, is my Strawberry Basil Lemonade.

  1. Mmmmm. I can think of nothing better than those caramel brownies you just posted, and a nice glass of this lemonade. A gorgeous color. Where are my flip flops and sunglasses?

  2. This looks delicious! I am lucky enough to be enjoying sunny weather in the 70s! Thank you central California! I will definitely bringing this to a BBQ this weekend! Thanks for sharing!

  3. I’m down in San Diego and I know just what you mean about Spring already creeping up on us. I think I’d prefer a little more winter (or even any at all, it’s been a warm past few months is SoCal!), but I think this lemonade is just what I need to get in a Springtime frame of mind. It looks perfect!

  4. I was thrilled to find this Meyer lemon blueberry mint lemonade recipe. This is fantastic. Every year I host a potluck dinner where everyone is asked to bring a Meyer lemon dish, from entrees to desserts. Everything has to have Meyer lemons in it. I just know your Meyer lemon blueberry mint lemonade recipe will be a big hit.

Meyer Lemons are like love. Sometimes hard to find, but well worth the wait.

  5. Perfect for summer, Gaby! This sounds so refreshing and has some of my very favorite flavors – not to mention the idea of droppin’ a little vodka in there. 🙂
