I have a weakness for cookies, and chocolate, and all desserts for that matter. This week I made these delicious Cowboy Cookies which are Chocolate Chip Cookies with Oats and Coconut…. ummmmm heaven! Seriously… you need to make these… they will rock your world… but don’t eat more than let’s say 7 at a time… because then you won’t eat your dinner… whoops 🙂 This is one of Martha Stewart’s recipes!

and… only 2 more days until my BIRTHDAY (well 2 full days… its on June 1st)!!!!! Can you tell that I am excited. I celebrate my birthday for at least 2 weeks… usually 3… and I can’t wait!

  1. Gaby~those look so yummy!! I love cookies just like you!! thanks for sharing and Happy birthday!!

  2. They look delicious. I will be making them real soon. Maybe to celebrate your birthday 🙂 Have a good one!

  3. Happy early birthday! I just celebrated mine this past Wednesday – so best wishes, fellow Gemini. 😎

These cookies are great; we already love oatmeal chocolate chip but throw in my current fave, coconut, and it’s a total winner!

  4. Those look fantastic!! I love anything with coconut, and oats… and of course, chocolate chip cookies! Delish!

    1. Hi Jackie! I dont think they will be too sweet – I just buy the shredded coconut from the grocery store! I have never paid attention to if its sweet or not! I say go for it – they would be delicious even if they were a little sweeter than normal!

  5. Hi Gabby! Thanks for this recipe. I tried it last night for my mom who was craving oatmeal cookies. I substituted shortening and coconut oil for the butter (my baby brother who is still nursing is allergic to dairy) and used pecans instead of chocolate chips. They were less chewy than yours, more crispy. I think it’s probably because of the butter substitute. But hey, at least they tasted good, right? And I think my mom did eat 7 or more of the cookies, lol. Don’t worry, it was after dinner 😉

  6. I want to make these for a Christmas cookie exchange but was wondering about how many cookies this recipe will make.

    1. same temp and time as printed here! Just freeze the dough, remove when ready to scoop and bake!

    2. I made the dough and rolled it into logs, I got about 4 logs and baked the remaining dough. When I need/want fresh cookies, just take out the dough while the oven pre-heats and then slice and bake the cookies.

  7. I just made these and they turned out SOOOOO GOOOD! I made a couple tweaks though per my husband’s request (he doesn’t like chocolate). I toasted the coconut and subbed dried cranberries for the chocolate chips. Took a bit longer for my cookies to bake but worth the wait. Would definitely make these again!
