These Green Harissa Tartines with Bacon and Avocado will satisfy every craving imaginable. If you’ve been reading WGC for the past few years, you know that I was neglected of bacon for the better part of my life (read: my mom is a vegetarian) but I’m making up for lost time now. Recently I’ve gotten to know the Smithfield brand and it’s the PERFECT option for go-to bacon whenever you’re at the market. I’ve used it for these tartines, added it to a Bacon and Brussels Sprouts Pizza, tossed it into a fall roasted veggie salad, rolled it up into my breakfast burritos… and I’ve even gone so far as to incorporate it into a Hot Kale and Bacon dip that’s coming to the blog soon. I mean, when a box of bacon shows up on your doorstep, what’s a girl to do!? Clearly, I’m in it to win it! Also - here’s a quick hack! When you’re making the harissa, you can sub in other green veggies and herbs if you have them on hand. Like if you have leftover basil, throw it in. No spinach but tons of kale, that works as a replacement!! It’s one of those spreads/recipes that you can also use for any number of purposes! Toss it into some scrambled eggs, or thin it out with some olive oil and make it into a salad dressing. Skies the limit! And kids and adults will love these.

Ingredients
  

  • 6 thick cut sliced of bread toasted
  • 3 avocados cut in half and thinly sliced
  • 6-12 Smithfield Hometown Original Bacon strips cooked until crispy and broken into smaller pieces
  • 1 recipe Green Harissa below

For the Green Harissa

  • 1 jalapeño
  • 1 bunch cilantro
  • 1 bunch parsley
  • 1 cup fresh spinach
  • ½ cup almonds
  • 1 clove garlic roughly chopped
  • 1 ½ teaspoons freshly-squeezed lemon juice
  • ½ teaspoon ground cumin
  • ½ teaspoon lemon zest
  • 4 tablespoons extra-virgin olive oil divided
  • water as needed

Instructions
 

For the Green Harissa

  • Combine everything in a food processor and whirl for 2 minutes until smooth. Add a few teaspoons of water if you need to smooth it out. It should be pesto consistency.
  • Slather a few tablespoons of the Green Harissa on each piece of bread. Top with ½ avocado thinly sliced and fanned out and finish with equal amounts of the cooked bacon and herbs. Serve immediately.

Notes

Keep cooked bacon in the fridge at all times. It's perfect for recipes like these or adding a big of crunch to a salad.

  1. I was wondering if I could replace spinach for arugula? Would the arugula be too bitter or should I just stick to using spinach as suggested? Thanks!
