We’ve got big things going on over here today. Let’s start with a healthy recipe shall we? I mean I hope I’m not the only one who over indulged yesterday…

and other fabulous nibbles that go hand in hand with the Super Bowl. Well, not to worry. I’ve got you covered.

I recently made this awesome Spicy Roasted Broccolini Quinoa Salad for Design Sponge. First off, let me just jump up and down for a hot second. Omg, so excited that I was Design Sponge. Seriously one of my favorite sites ever. I could spend hours looking at all the fabulous tips and tricks and before and after photos. Love.

So… this Spicy Roasted Broccolini Quinoa Salad will rock your world. It’s nutty because of the quinoa and tangy with the addition of goat cheese and then you’ve got the all time best vegetable in the whole world on top.  Basically it’s the perfect lunch. And you should make it for a big group of friends and pair it with a little sparking wine. Or regular wine. Whatever floats your boat. So hop on over to Design Sponge for the recipe

And because it’s Monday. And there are some very exciting things going on this week, and because my mama officially opened her Etsy store last week, we are giving away a gorgeous handmade ceramic from her latest collection just in time for Valentine’s Day 🙂

  1. Gaby, I LOVE everything quinoa! your salad looks like the perfect lunch for workdays. Delicious, quick, low-maintenance, protein-filled, healthy… I want to eat this for lunch for the next month!

Also, yesterday I ate some awesome turkey chili, pizza, and brownies during the superbowl watching 🙂

  2. This quinoa salad is perfect! I am definitely in need of healthy foods after this weekend. For yesterday’s game, I made buffalo wings with homemade ranch dip, ginger soy glazed wings, bacon deviled eggs, no-bake chocolate peanut butter cookies, a pear tart, mini crab cakes, and stuffed mushrooms. Can you believe I was actually going to make chips and guacamole, spring rolls, and lettuce wraps, but ended up not doing it, because I was tired of making everything else….so you know what we’ll be having for dinner in the next few days. LOL

  3. Well, you said to leave a “little” post, but we ate a LOT during the Superbowl. Twelve of us started the evening with dinner of sloppy joes (made my moi), chili, chicken wings, and buffalo chicken wing soup. Then we moved on to snacks of buffalo chicken wing dip (thanks to me), loaded baked potato dip (me again), and kettle corn. Then we moved on to dessert of ice cream cake (for an 18th birthday also celebrated yesterday), regular cake, cupcakes, and chocolate chip cookie dough dip (and…me again). I cooked a lot yesterday.

  4. Congrats on the D*S article Gaby — I too love that site! As for this recipe, I’m definitely in the need of something healthier like this after yesterday’s snacks and treats.

  5. We ate wayyy too many bacon-wrapped tater tots! and some Nutella Cream Pie since it was also World Nutella Day 🙂

  6. We had pizza, honey bbq wings, spicy roasted chickpeas, tortilla chips, popcorn and spinach artichoke dip! It was AMAZING! The bowls are so cute! I recently got engaged and I think they would be a great addition to my new kitchen!

  7. My sportster brother made awesome chili and we had North Carolina style pulled pork barbecue!! Love those bowls! They are awesome.

  8. Those are adorable! I had to work, but still had crockpot meatballs, dips, chips, cheeses, vegetable tray, brownies, cheesecake and chili.

  9. I made some great appetizers, pulled pork sliders with cole slow, your Cherry Chocolate Chip Cookies (a huge hit!) and Brown Butter, Sea Salt Rice Krispie Treats. Everything turned out really well!!! Thanks for the cookie recipe!!

  10. These mini pie plates are ADORABLE! I would love to win them! Don’t worry, you’re not the only one that overate. I had brunch with some classmates (gastronomy students- we cook and eat a lot!), and had doughnuts, sticky buns, frittatas, brie & crackers, and mimosas!

  11. I’m really not into the super bowl, (might be the fact that I’m not American) but I still ate that day. Just plain old lasagna, oh, and nachos for lunch!

  12. On SuperBowl Sunday, we ate Shepherd’s Pie served in personalized sized ramikens; they were filled with luscious veggies, but also lovely beef strips and smooth, creamy sauce. It was a hit!

  13. Can’t believe that we didn’t have guacamole, but honestly, we just forgot to pick some for ourselves. We have to pick them a week before we want to eat them, so they’ll have time to ripen. For Superbowl we had take-out Chinese food! And creme brulee.

  14. Seven layer bean dip, funfetti cupcakes, chili, salad (spinach, almonds, croutons, ranch dressing), buffalo chicken pizza, homemade fried hot wings. NOM!

Such pretty mini pie plates! I recently made apple pies in 4 oz ball jars. What an event!

  15. I had the saltiest wings at Wing Stop..blech! I would’ve rather stayed home and made my own food, but got suckered into meeting family at WingStop.

  16. I had buffalo chicken dip, 7-layer dip then some cookie dough dip. Also had Bailey’s cupcakes and rum balls. Obviously the themes of the night were dips and booze-infused desserts 🙂

  17. why, your slutty brownies of course! they were off the hook! made a double batch. half went with the teenagers to church and half stayed home. plus i told someone about the brownies that afternoon and sent her the link and she made them as well! thanks!

  18. We did a seafood bake….Crab, Clams, shrimp, potatoes, and corn, and baked up in a big ol pot. With sourdough bread on the side.
