Pasta Gremolata

Ingredients

  • ½ cup minced parsley
  • 6 cloves garlic minced
  • Coarsely grated zest of 2 lemons plus the juice of 1 lemon
  • ¼ cup extra-virgin olive oil
  • Kosher salt and freshly ground pepper to taste
  • 1 pound pasta

Instructions

  • In a bowl combine the parsley, garlic, lemon zest and lemon juice. Stir to combine. Season with salt, pepper and olive oil.
  • Cook the pasta until al dente. Drain and set aside.
  • In a large bowl, toss the gremolata with the pasta until well coated. Serve immediately.

Notes

You can also use a blender to make the gremolata, if you prefer.
