Wash a lemon, lime or orange well.
Using the channel knife feature of your zester, cut the top layer of peel in a spiral around the fruit. Apply the zester with even pressure, carefully removing mostly zest and as little of the white pith as possible.
Take the length of peel and wrap it around a straw in a tight spiral and carefully pin each end to the straw. Let it hang out on the straw for at least 20 minutes, and then carefully remove and place onto your cocktail.
