Greek Fries

I had these at a restaurant and just knew I had to bring the Greek flavor to the dinner table at home.

Ingredients

  • 4-5 large red skinned potatoes cut into wedges
  • 6 tablespoons olive oil
  • 5 cloves garlic finely minced
  • 3 tablespoons finely chopped parsley
  • 3 tablespoons fresh oregano
  • ½ cup crumbled Feta
  • ½ cup homemade Tzatziki
  • Kosher salt and freshly cracked black pepper

Instructions

  • Preheat oven to 450 degrees.
  • Place the potato wedges, 3 tablespoons of olive oil and salt and pepper in a zip top bag and shake to combine. Transfer the potatoes to a sil-pat lined baking sheet and evenly spread out the wedges. Transfer to the oven and bake for 30-35 minutes, flipping once, until evenly baked and golden brown.
  • Whisk remaining olive oil, chopped garlic, parsley and oregano in a large bowl. Add the mixture to the hot fries and toss to combine. Taste and season with extra salt and pepper as neededArrange on a platter. Sprinkle with feta and dollops of tzatziki and serve alongside lemon wedges. Adjust salt as needed.

Notes

Tzatziki is one of my favorite dips for SO many dishes. It is absolutely instrumental in giving these fries a Greek flair.
