Almond Butter Apple Oatmeal Cups

These Almond Butter Apple Oatmeal Cups make for a quick and easy breakfast on the go.

Ingredients

  • 3 cups old fashioned oats
  • ½ teaspoon cinnamon
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 ½ cups milk of choice
  • ½ cup honey
  • 2 tablespoons ground flax seed
  • 1 teaspoon vanilla extract
  • ¾ cup unsweetened apple sauce
  • 1 cup diced apple
  • 1 teaspoon cinnamon
  • 3 tablespoons almond butter

Instructions

  • Preheat the oven to 350 degrees and line muffin tin with 12 paper liners.
  • In a large bowl mix together base dry ingredients: oats, cinnamon, baking powder and salt.
  • In another bowl mix together the remaining base wet ingredients: milk, honey, flax seed and vanilla extract.
  • Stir in the apple sauce, diced apples, cinnamon and almond butter. Mix well and let sit for 5 minutes.
  • Combine the dry mix with the apple cinnamon bowl!
  • Scoop mixtures evenly into muffin tin with liners.
  • Bake for 35 minutes or until the center of the cup has set. Cool and enjoy!

Notes

  • Almond Butter Baked Oatmeal Cups stored in an air-tight container will last for up to 5 days in the refrigerator.
 
  • Freeze individually in zip top bags for up to 3 months. Reheat in the microwave or oven before serving.
