Greek Chopped Salad

This Greek Chopped Salad is filled with crisp lettuce, tomatoes, cucumbers, onions, lots of herbs, and of course chunks of feta, all mixed in a delicious Greek vinaigrette.

Ingredients

  • 1 head romaine lettuce finely shredded
  • 4 scallions finely shredded
  • 2 cups cherry tomatoes halved
  • cup feta cut into small dice
  • 2 Persian cucumbers small dice
  • ¼ red onion sliced
  • ¼ cup fresh mint finely chopped
  • ¼ cup fresh dill finely chopped

For the Greek Vinaigrette

  • 2 tablespoons red wine vinegar
  • 6 tablespoons olive oil
  • 2 cloves garlic finely chopped
  • 1 teaspoon dried oregano
  • kosher salt and freshly cracked black pepper to taste

Instructions

  • Arrange all the salad ingredients in a large bowl.
  • Whisk together the ingredients for the dressing and drizzle on top when ready to serve.
  • Toss and serve immediately.

Notes

  • This salad (without the Greek Vinaigrette) will keep for up to 4 days when stored in an air-tight container. When ready to eat pour the dressing over and toss before serving.
