Greek Chopped Salad
This Greek Chopped Salad is filled with crisp lettuce, tomatoes, cucumbers, onions, lots of herbs, and of course chunks of feta, all mixed in a delicious Greek vinaigrette.

- 1 head romaine lettuce finely shredded
- 4 scallions finely shredded
- 2 cups cherry tomatoes halved
- 1¼ cup feta cut into small dice
- 2 Persian cucumbers small dice
- ¼ red onion sliced
- ¼ cup fresh mint finely chopped
- ¼ cup fresh dill finely chopped
For the Greek Vinaigrette
- 2 tablespoons red wine vinegar
- 6 tablespoons olive oil
- 2 cloves garlic finely chopped
- 1 teaspoon dried oregano
- kosher salt and freshly cracked black pepper to taste
Arrange all the salad ingredients in a large bowl.
Whisk together the ingredients for the dressing and drizzle on top when ready to serve.
Toss and serve immediately.
- This salad (without the Greek Vinaigrette) will keep for up to 4 days when stored in an air-tight container. When ready to eat pour the dressing over and toss before serving.
