Green Harissa Tartines with Bacon and Avocado

Ingredients

  • 6 thick cut sliced of bread toasted
  • 3 avocados cut in half and thinly sliced
  • 6-12 Smithfield Hometown Original Bacon strips cooked until crispy and broken into smaller pieces
  • 1 recipe Green Harissa below

For the Green Harissa

  • 1 jalapeño
  • 1 bunch cilantro
  • 1 bunch parsley
  • 1 cup fresh spinach
  • ½ cup almonds
  • 1 clove garlic roughly chopped
  • 1 ½ teaspoons freshly-squeezed lemon juice
  • ½ teaspoon ground cumin
  • ½ teaspoon lemon zest
  • 4 tablespoons extra-virgin olive oil divided
  • water as needed

Instructions

For the Green Harissa

  • Combine everything in a food processor and whirl for 2 minutes until smooth. Add a few teaspoons of water if you need to smooth it out. It should be pesto consistency.
  • Slather a few tablespoons of the Green Harissa on each piece of bread. Top with ½ avocado thinly sliced and fanned out and finish with equal amounts of the cooked bacon and herbs. Serve immediately.

Notes

Keep cooked bacon in the fridge at all times. It's perfect for recipes like these or adding a big of crunch to a salad.
