Bell Pepper and Mint Lentil Hummus

  • 14 oz cooked lentils
  • 1 roasted red bell pepper
  • 3 tablespoons feta cheese
  • 2 tablespoons chopped mint leaves
  • 2 tablespoons olive oil
  • 3 cloves garlic peeled
  • 2 teaspoons red pepper flakes
  • Kosher salt and freshly cracked black pepper to taste.


  • Combine all ingredients in a large food processor and pulse until smooth. Season with salt and pepper as needed and serve with pita chips, celery or carrot sticks.
