Fajita Burgers

These Fajita Burgers work for adults and toddlers alike – loaded with flavor and perfect for dipping into some guacamole!

Ingredients

For the Peppers

  • 2 tablespoons olive oil
  • ½ large sweet onion finely diced
  • ½ large red onion finely diced
  • 1 red bell pepper finely diced
  • 2 cloves garlic finely chopped
  • 1 lime juiced

For the Burgers

  • pounds ground chicken not too lean
  • teaspoons kosher salt
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground chili powder
  • 1 tablespoon olive oil
  • Guacamole and pico de gallo to serve

Instructions

  • Preheat a skillet over medium high heat. Heat the oil and then add the diced onions and peppers and saute until soft. Add the garlic and saute for 60 seconds until fragrant. Remove from the heat and let cool slightly. Season with salt and pepper and lime juice.
  • Mix ground chicken and seasonings until well combined. Add in the cooled cooked fajita veggies along with any oil still in the pan. Form the mixture into small-ish patties, fit for a toddler.
  • Reheat the same skillet over medium high heat with an additional tablespoon of oil. Cook burgers for about 6 minutes per side until cooked through. Serve with guacamole and pico de gallo / or chopped cherry tomatoes.

Notes

  • Feel free to use ground turkey instead of ground chicken.
