Cucumber Salad
If you need an easy but delish side salad, this cucumber salad is it! Made with a lemon vinaigrette, fresh chives and cucumber, it works as a side salad for just about any main course.

- 2 seedless cucumbers halved and sliced
- 2 avocados diced
Dressing
- 2 tablespoons fresh lemon juice
- 2 tablespoons olive oil
- 1-2 tablespoons chives chopped
- Kosher salt and freshly cracked black pepper to taste
- ⅓ teaspoon red chili flakes
- 2 cloves garlic minced
In a medium bowl, whisk the lemon juice, olive oil, chives, garlic, salt, pepper and red pepper flakes and adjust seasoning to taste.
To the same bowl, add the avocado and cucumbers and toss to combine. Serve immediately.
This recipe is PERFECTION as is - but feel free to add in some tomatoes, olives, lettuce, cheese etc. Use it as a base and build. It's perfect all summer long.
I make this for our family most nights and I always make the dressing first in a large bowl and then toss in the avocado to give it a quick coating.
Then the cukes can go on top and they just sit there for 45 minutes + without being stirred in. That way, when it's time to eat, everything gets a quick toss and you're good to go. The cucumbers can't get mixed too early as they will get soft. But the avocado was coated in the vinaigrette so it won't oxidize. Best of both worlds and everyone is happy!
