If you're familiar with my moms Cucumber Salad from my cookbook, you know that this makes an appearance on my dinner table almost EVERY single night! It's the most perfect side salad known to man (goes beautifully with many of these epic chicken recipes, grilled flank steak or salmon shawarma) and now it's on WGC for us to access on a daily basis.

Why I Love This Recipe

Growing up in my home meant that there was also a constant supply of double chocolate chip muffins, we were never far away from my dad's kitchen sink cookies, and that an avocado cucumber salad was on the table 99% of the time for family dinner. This cucumber salad has taken many forms over the years but this is it in it's simplest form. It's refreshing and crunchy and creamy and it truly works with just about any main dish. I couldn't be more obsessed.

  • Seedless Cucumbers
  • Avocados
  • Lemon Juice
  • Olive Oil
  • Chives
  • Salt & Pepper
  • Red Chili Flakes
  • Garlic Cloves

How to Make Cucumber Salad

Olive oil, lemon juice, chives, garlic, salt, pepper, and red pepper flakes in a medium clear bowl on top of a white countertop.

Step 1: In a medium bowl, whisk the lemon juice, olive oil, chives, garlic, salt, pepper and red pepper flakes and adjust seasoning to taste. 

Diced cucumber and diced avocado combined with oil and lemon and seasoning mixture in a clear white bowl on top of a white countertop.

Step 2: To the same bowl, add the avocado and cucumbers and toss to combine. Serve immediately. Cucumber salad is ready to roll and you'll be obsessed.

Tips & Tricks

I make this for our family most nights and I always make the dressing first in a large bowl and then toss in the avocado to give it a quick coating - thank you for that hot tip mom. Then the cukes can go on top and they just sit there for 45 minutes + without being stirred in. That way, when it's time to eat, everything gets a quick toss and you're good to go. The cucumbers can't get mixed too early as they will get soft. But the avocado was coated in the vinaigrette so it won't oxidize. Best of both worlds and everyone is happy!

If you need an easy but delish side salad, this cucumber salad is it! Made with a lemon vinaigrette, fresh chives and cucumber, it works as a side salad for just about any main course.

Ingredients
  

  • 2 seedless cucumbers halved and sliced
  • 2 avocados diced

Dressing

  • 2 tablespoons fresh lemon juice
  • 2 tablespoons olive oil
  • 1-2 tablespoons chives chopped
  • Kosher salt and freshly cracked black pepper to taste
  • â…“ teaspoon red chili flakes
  • 2 cloves garlic minced

Instructions
 

  • In a medium bowl, whisk the lemon juice, olive oil, chives, garlic, salt, pepper and red pepper flakes and adjust seasoning to taste.
  • To the same bowl, add the avocado and cucumbers and toss to combine. Serve immediately.

Notes

This recipe is PERFECTION as is - but feel free to add in some tomatoes, olives, lettuce, cheese etc. Use it as a base and build. It's perfect all summer long.

    My family loves this salad...very fresh and flavorful. I could eat it as a meal! I added tomatoes and used basil olive oil which was a treat! It would be fun to experiment with other flavored olive oils as well (chili, jalepeno?).

    This is so simple but so delicious. I added feta too, like you suggested- so good I want to lick the bowl clean! (I did.. ) this dressing might be really good on your chicken fajita Cobb salad too!! Another of my favorites.

    I have been making this on the regular from your cookbook (except with balsamic). I will have to try with lemon juice for a summer vibe. So so SO good!
