Strawberry Ice Cream with Oreos - HELLO MY CHILDHOOD DREAMS. I live for an incredible fresh strawberry ice cream. Add to that some oreos and we are in business. We used to make a version of this when I was a kid and I will forever be a fan. Ask my 2.5 year old child what kind of ice cream she wants and the answer is strawberry. So it only made sense that we brought back this old school WGC favorite just in time for any end of summer parties!

Ingredients

  • cups fresh strawberries stemmed and sliced
  • 2 tablespoons fresh lemon juice
  • ¾ cups sugar
  • ¾ cups whole milk
  • 1⅓ cups heavy cream
  • teaspoon pure vanilla extract
  • 10 oreos smashed
  • ¼ cup mini chocolate chips

Instructions

  • In a small bowl combine the strawberries and lemon juice and ½ cup of the sugar. Combine ingredients and let sit for at least 2 hours. Strain the juice and reserve. Puree the rest of the berries and set aside.
  • In another bowl combine the milk and remaining sugar until fully dissolved. Stir in the heavy cream, strawberry juice, pureed strawberries and vanilla. Turn the ice cream machine on and pour the mixture into the freezer bowl. Mix until thickened, about 25-30 minutes. 5 minutes before it is done add the mashed Oreo cookies and the chocolate chips. Once done you can eat immediately or freeze for a firmed consistency.

Notes

  • You need super in-season strawberries for this. None of the commercial ones that don't smell like strawberries - they will make the best ice cream - PROMISE!
  • If you don't have an ice cream maker, don't panic. This would be an incredible recipe to use as a sub and use the strawberries in place of the blueberries in the compote.
