Tacos De Alambre

Tacos de Alambre are hearty Mexican tacos made with grilled meats (usually beef), bell peppers, onions, cheese, and sometimes bacon, all cooked together and served on tortillas. The combination of savory meat, melted cheese, and vegetables creates a flavorful, filling dish often enjoyed with salsa and lime and they are PERFECTION

Ingredients

  • 4 pieces bacon
  • ½ pound chorizo sausage links
  • 1 pound beef (sirloin, ribeye, top round, or even flank or skirt steaks) shaved
  • 1 red bell pepper diced
  • 1 yellow bell pepper diced
  • 1 yellow onion diced
  • 1 jalapeno pepper diced
  • 2 tablespoon taco seasoning
  • 3 cups shredded mozzarella cheese
  • street style corn tortillas
  • lime and cilantro for garnish

Instructions

  • In a skillet over medium heat, cook the bacon until the fat renders and it becomes crispy. Remove the bacon and drain it on a paper towel-lined plate. Crumble and set aside.
  • In the same pan, add the chorizo. Break it apart with a spoon as it cooks, letting it cook through completely (about 5-7 minutes).
  • Add the diced peppers and onion to the pan. Cook until the onions turn translucent and the vegetables are halfway cooked, about 10-15 minutes.
  • Stir in the Dalkin&Co Taco seasoning, mixing well to combine.
  • Add the shaved beef to the skillet, cooking until it is fully cooked (about 5 minutes).
  • Stir the crumbled bacon back into the pan, then top with shredded cheese. Cover the skillet and let the cheese melt over the mixture.
  • Serve the mixture straight from the skillet with warm tortillas. Garnish with lime, cilantro, or your favorite toppings.
