Green Goddess Dressing (Vegan)
Isn’t Green Goddess Dressing usually loaded with mayo and sour cream? Not here. Not mine. I can’t get behind having all that in a salad dressing or dip.

Ingredients

scallions
roughly chopped (white and light green parts only)

medium ripe avocado

tablespoons
fresh lemon juice
plus 1 teaspoon lemon zest

tablespoons
champagne vinegar
3 to 5

water

extra virgin olive oil

fresh basil
chopped
⅓

fresh parsley
chopped

garlic
Kosher salt and freshly cracked to taste
Instructions
Combine everything in a food processor or high powered blender and blend until smooth.
Add a few extra tablespoons of water if you need to smooth it out.
Taste and adjust salt and pepper as needed.
Notes
Use immediately, or store in an air tight refrigerated container for up to 4 days.
