Tex Mex Style Sloppy Joe
While this isn't a traditional Sloppy Joe recipe, I'd venture to say it's better. Growing up in AZ meant taco seasoning on just about everything and the addition of it on this quick and easy weeknight staple is perfection. Like everything on WGC, feel free to get creative with your toppings! Extra cheese, salsa, guacamole, sour cream... you name it!

- 1 tablespoon olive oil
- 1 pound lean ground turkey or ground chicken
- 1 large red bell pepper seeds removed and diced
- 1 medium onion diced
- 1 small poblano seeds removed and diced
- 2 cloves garlic minced
- 2 tablespoon taco seasoning
- 2 tablespoon tomato paste
- 14 oz can diced fire roasted tomatoes with the liquid
- ½ cup water
- 1 teaspoon Worcestershire sauce
- Salt and Pepper
- 4 hamburger buns toasted if you want to be fancy
Heat the oil in a large skillet over medium high heat, add the ground turkey, bell pepper, onion, poblano and garlic, cook until the turkey has browned and the vegetables are soft for about 5 minutes.
Add the fajita seasoning and tomato paste and cook 1-2 min.
Add in the diced tomatoes, water, Worcestershire sauce and reduce the heat to medium low and simmer for 7-10 minutes or until the sauce has thickened.
Remove from the heat and serve on hamburger buns topped with a handful of shredded pepper jack and a hearty dollop of guacamole.
