It’s holiday season and you know what that means - random visitors that just pop by to say hi. Maybe it’s the fact that my friends know I have food coming out of my kitchen at all times… but the amount of text messages saying, “I’m in the area, we’re coming to visit,” is at an all-time high! I can never let friends leave empty-handed - so having some Browned Butter Thick and Chewy Crispy Rice Treats on-hand is imperative. You can make these at any time, wrap them up, freeze or refrigerate them, and serve them to friends for a little treat. Just don't serve frozen - let them come to room temp so you can appreciate the gooey butter deliciousness.

Let’s discuss why these ratios and ingredients are better than those listed on the box….

#1 - browned butter. Butter is delicious no matter how you spin it - but that nutty, delicious browned butter is NEXT LEVEL amazing. I make mine with Land O Lakes® Unsalted Butter and it’s true perfection.

#2 - extra marshmallows. Do you even need to ask why? If the marshmallow ratio isn’t aggressively large, why even bother?

#3 - flaky sea salt. This brings out all the flavor and it’s a fun extra crunch.

So, if you’re smart… you’ll stock up on Land O Lakes® Unsalted Butter along with the rest of these ingredients. Then, go make these Browned Butter Thick and Chewy Crispy Rice Treats. They are truly life-altering.

Cook Time 5 minutes
Total Time 10 minutes
Course Dessert
Cuisine American
Servings 12 people

Ingredients

  • 8 ounces Land O Lakes® Unsalted Butter plus more for buttering parchment
  • 2 10-ounce bags marshmallows
  • 10 cups crispy rice cereal
  • Flaky sea salt (optional but heavily encouraged)

Instructions

  • Line a 9x9 or 9x13 baking sheet pan with parchment paper. (9x9 will result in a thicker treat, 9x13 will be slightly more thin)
  • In a large pot, melt the butter over medium-low heat. It will melt first, and then foam. After it foams, it will start to turn brown and smell nutty. Watch closely and stir often.
  • As SOON as the butter is golden brown, stir in marshmallows. Melt and stir until the mixture is smooth.
  • Turn off heat, add cereal and mix carefully. Pour into the prepared pan and press down lightly. Sprinkle with flaky salt to finish. Let cool and cut into squares or bars.

This recipe is absolutely bonkers good. I decided to just dump the whole box (12 cups vs 10cups in the recipe) and they still turned out amazing. My entire office consumed the pan in like 3 hours. They all wanted the recipe!! DON'T SKIP THE SALT AT THE END! You're welcome. (and also thanks Gaby for another killer recipe!!!!)

Oh hells yeah! You know how you go to bakeries and coffee shops and see those huge, beautiful Rice Krispie treats!? These are better. Gotta do the 9x9 pan and you get these glorious treats. Perfect as written. Thank you Gaby!

The browned butter and flaky sea salt is a game changer!!! These do not disappoint. I had to be extra and added crushed oreos to half of the pan. So delicious! I won't make crispy rice treats any other way going forward. Thanks, Gaby!

These are amazing! I love to bake and rice crispy treats never turned out the way I hoped until this recipe! Perfect ratios and the salt adds the right balance. Thank you Gaby!

  5. Silly question- but 10 ounces of cereal? The old recipe calls for 6 cups? I isn’t that 48 ounces? Or am I missing a measuring science thing. Sorry to be questioning the goddess but need clarification. Also I love adding some other cereals ….like a Christmas one….or a chocolate one sometimes. ❤️✨

    1. are you talking about the old recipe on the back of the box? Just updated this to reflect cups so it's easiest to measure!

    2. The recipe said 10 cups of rice crispies, not 10 oz. The 10 oz was referring to the (2) marshmallow bags.

    1. How do you keep yours nice and soft? Mine seem to get crunchy & hard (haven't tried this recipe).

  6. This is exactly how we’ve make them for a long time. It started out an experiment and we’ve never gone back to the old way! The best!
