    Why I Love This Recipe

    Give me a side dish that comes together in less than 5 minutes and I am in! This slightly spicy charred snap pea salad is piled high with feta and couldn't be easier! You could also replicate this side dish / salad with any in-season veggie. It would be great with regular green beans, broccoli, cauliflower etc.

    How to Make

    Heat oil in a large nonstick skillet over medium-high heat over a grill - or use a grill pan. Add peas and cook until slightly charred, about 2-4 minutes. Continue to cook, stirring occasionally, until charred on all sides, 3 to 4 minutes more.

    Add the chili-garlic sauce and lemon juice and toss to combine. Remove to a platter, add feta, salt and pepper and serve

    Tips & Tricks

    Use High Heat: To achieve that perfect char, use a cast-iron skillet or a grill pan on high heat. Make sure the pan is hot before adding the peas, so they sear quickly without becoming too soft.

    Minimal Oil: Use just a light coating of oil, like olive or avocado oil. Too much oil can cause the peas to fry instead of char.

    Season Simply: A sprinkle of coarse salt, freshly ground black pepper, and a squeeze of lemon juice can elevate the flavor without overpowering the natural taste of the snap peas.

    Add Texture: Consider adding crumbled feta for a creamy contrast.

    Herbs and Citrus: Fresh herbs like mint, basil, or dill, and a touch of citrus zest, can add a refreshing note to balance the smoky char. I also love the slight addition of chili garlic sauce to give it a hint of spice!
