My love for all things french fries runs deep. You can bet that I’m ordering any kind of fries on any kind of menu. It’s basically my job to taste as many of them as humanly possible! Recently I tried these Greek Fries up in San Francisco and my head exploded with so much excitement, I am 100% sure you guys will be in love.
Here’s the thing about potatoes… particularly fries - they are glorious on their own. Crispy on the outside, tender on the inside, golden brown and hot from the frying/baking process… I mean it’s perfection. But add to that a few key ingredients to give them some extra jazzy flavor and you’re taking fries to a whole new level. We’ve done a LOT of fries here on What’s Gaby Cooking, Carne Asada Nacho Fries, Fiesta Fries, the list goes on. Lately (read: ever since this Greek restaurant in San Francisco) I’ve been having a love affair with Greek food. And there’s a MAJOR shortage of great Greek restaurants in Los Angeles. So being the chef I am, I’ve just been whipping up my favorite things at home and these Greek Fries are at the top of the list. Loaded with tzatziki (you can find it at any supermarket or make it at home), fresh oregano, feta cheese and a little salt… it’s perfection. And it’s perfect for game day - your guests can grab fries as they please and chow down. It’s all about the finger food in my opinion while you’re parked in front of the TV!
So without further ado…. go grab some potatoes and get into it!

Greek Fries
Ingredients
- 4-5 large red skinned potatoes cut into wedges
- 6 tablespoons olive oil
- 5 cloves garlic finely minced
- 3 tablespoons finely chopped parsley
- 3 tablespoons fresh oregano
- ½ cup crumbled Feta
- ½ cup homemade Tzatziki
- Kosher salt and freshly cracked black pepper
Instructions
- Preheat oven to 450 degrees.
- Place the potato wedges, 3 tablespoons of olive oil and salt and pepper in a zip top bag and shake to combine. Transfer the potatoes to a sil-pat lined baking sheet and evenly spread out the wedges. Transfer to the oven and bake for 30-35 minutes, flipping once, until evenly baked and golden brown.
- Whisk remaining olive oil, chopped garlic, parsley and oregano in a large bowl. Add the mixture to the hot fries and toss to combine. Taste and season with extra salt and pepper as neededArrange on a platter. Sprinkle with feta and dollops of tzatziki and serve alongside lemon wedges. Adjust salt as needed.
