Greek Fries are the ultimate snack or side dish for literally any meal — BBQs, casual weeknight dinners, or even just a random Tuesday when you're feeling a little extra. Plus, they come together super easily in the oven with way less mess than frying. Major win.
Ingredients & Substitutions
- Any colored potatoes
- Olive oil
- Garlic
- Fresh parsley
- Fresh oregano
- Crumbled feta cheese
- Homemade tzatziki
- Kosher salt
- Freshly cracked black pepper
- Lemon wedges (for serving!)

How to Make
- Preheat the oven to 450°F.
- Place the potato wedges, 3 tablespoons of olive oil, a big pinch of kosher salt, and a few cracks of black pepper into a zip-top bag. Shake to coat evenly.
- Spread the potatoes out on a Silpat- or parchment-lined baking sheet in a single layer.
