Those of you who follow my husband, Thomas, on his instagram know he's obsessed with the "Thomas’ Faux-prese"
It's been a daily occurrence for the last few weeks and really there's no end in sight. While summer might technically be over but that doesn't mean the summer produce is going anywhere quite yet. Tomatoes are having a moment and it's our duty to use them on a daily basis.
Thomas has taken it upon himself to create this incredibly easy summer salad that I've dubbed the Thomas Faux-prese. It's everything we all love in a caprese salad minus the cheese and plus avocados He's been on a health kick so the fresh mozzarella has taken a temporary backseat in his world! I'll admit, I was skeptical the first time he made it for me because I LOVE CHEESE... but newsflash it's so good!
The creaminess from the avocados is a perfect substitution for the creamy mozzarella and I won't be mad if we have this on tap on a night basis until tomato season sadly comes to a close!
Thomas’ Faux-prese
Ingredients
- 2 ripe avocados pitted and cut into wedges
- 3 heirloom tomatoes cut into wedges
- 1 pint heirloom cherry tomatoes halved
- Basil leaves
- Maldon salt & freshly cracked black pepper to taste
For the dressing
- 3 tablespoons balsamic vinegar
- ¼ cup olive oil
- Maldon salt & freshly cracked black pepper to taste
Instructions
- Combine the ingredients for the salad on a large serving platter.
- Whisk the ingredients for the vinaigrette together. Drizzle over the top and serve
Oh Yes! Another good thing for all my tomatoes!!! Go Thomas!
Summer is not technically over until September 23rd! 😉 Back to school does not equal the end to actual summer or your amazing tomato deliciousness... thank goodness.
