Do you ever have those days when you really couldn't be bothered to make dinner? I'll admit it - I do!! It happens more frequently than I care to admit but hey, that's life! Never fear though, I've developed some quick tips for weeknight meals that are 100% going to make your life easier!
You see, it's all about a little prep work. I'm not talking anything strenuous... just a few minutes here and there when you're feeling inspired and it's going to make your week that much easier!
There are 4 shortcuts I have on hand at almost any time. My basil vinaigrette. This roasted red pepper sauce. Tomato Confit. And my homemade tzatziki. Between the 4 of those, I can make magic.
For example - any of those would be the perfect to serve on top of a bowl of quinoa. Alternatively they'd be great on top of a bowl of leftover roasted vegetables.
The basil or red pepper sauce make for excellent salad dressings and double as the pasta sauce you'll ever have. All of them go perfectly over a store bought rotisserie chicken or any grilled protein for that matter! Baking a fish or roasting a piece of meat - these are all perfect compliments.
If you're flying solo, and I do from time to time, the tzatziki with carrots and celery makes a perfect single ladies dinner. Throw in a few crackers and you're done.

I agree - it is so helpful to keep some things made ahead for those super busy nights! Love to keep homemade chicken stock and pesto at the ready. Meats cooked ahead that can serve a second purpose like going in a soup or pulled sandwich the next night have been welcome sights on some of my busiest days!
