Prepare yourself for the Easter Brunch menu of your dreams! Easter is just days away and I’m ready to eat all the things!!
I’d like to make “brunching” my official job one day. It’s kinda my favorite thing to do. But until that becomes an acceptable form of work, I’m just going to continue to throw epic Sunday brunches (either for just our little fam or with friends once Covid is over!) and this weekends theme is Easter! So without further ado… here’s a whole bunch of sweet and savory recipes to keep your Easter Brunch Menu way easy but majorly delish!

BAGELS + BISCUITS + TOAST


Smoked Salmon Bar – My favorite way to entertain for a leisurely weekend brunch!! Loaded up with bagels from your fav bakery and then all the accoutrements! It’s perfection.
Garlic and Herb Biscuits – Or put these cheesy salty buttery biscuits front and center!
Avocado Toast – And here are all the toasts you could possible want…
Mezze Board – This would be the perfect thing to snack on pre-brunch.

Sun Dried Tomato Goat Cheese Crustless Quiche – This crustless quiche couldn’t be easier! And it doesn’t require you to make/buy a crust but still has a crunchy exterior. I am OBSESSED.
Bacon and Egg Puff Pastry – A creamy cheesy Puff Pastry Tart with poached eggs, bacon and some delish greens on top… YES PLEASE.
Saffron Tomato Shakshuka – These poached eggs in a saffron-y tomato sauce with grilled bread or pita are perfection.
Soft Scrambled Eggs – Or make a plate of the most perfect soft scramble on the planet and your life will never be the same.
POTATOES


Hasselback Scalloped Potatoes – These hasselback scalloped potatoes are equal parts cheesy, gooey, crispy, and so delicious. Easy to slice and serve!
Breakfast Potatoes – A giant tray of breakfast potatoes is the perfect way to feed a crowd. Specifically breakfast potatoes that are doused with some herbs, dipped in ketchup, and served alongside a soft scrambled egg or two.
Parmesan Roasted Potatoes – Crispy and savory these potatoes make an absolutely perfect side dish!
And now…. onto the sweets because what’s a brunch menu without something decadent?!

Vanilla Bean French Toast – This super easy vanilla bean french toast will rock your world.
Chocolate Chip Croissant Bread Pudding – All you need is croissants, some chocolate chips, and a few baking essentials and Chocolate Chip Croissant Bread Pudding is at your fingertips. GUYS – WE ARE LIVING OUR BEST LIVES WITH THIS ONE!!
Chocolate Chip Waffles – A DIY waffle bar is always a crowdpleaser.
LOAF CAKE + BANANA BREAD


Lemon Raspberry Loaf Cake – The most perfect Lemon Raspberry Yogurt Cake with a sweet Lemon Drizzle! Makes for an easy breakfast/brunch treat!
Double Chocolate Chip Banana Bread – It’s made in 1 bowl, so super quick and easy. And it’s obviously stuffed with plenty of chocolate chips because that’s the only smart way to eat banana bread.
Chocolate Chip Banana Bread – I could easily put down an entire loaf of this without any questions. I’m that big of a fan. You will be too when you try this.
SCONES


Strawberry White Chocolate Scones – These Strawberry White Chocolate Scones are moist, dotted with chocolate, and loaded with strawberries. They make for the perfect weekend treat.
Meyer Lemon Blueberry Scones – They are a must at any breakfast or brunch gathering. The Meyer lemon glaze will have you licking your fingers.
DESSERTS


Tiramisu – This Classic Italian Tiramisu is seriously one of the easiest desserts to make! It’s picture perfect with a sweet mascarpone filling, espresso dipped lady fingers and all the cocoa powder on top!
Mixed Berry Lemon Drenched Cake – This mixed berry lemon drenched cake is easy to make, drenched in a lemon simple syrup, topped with berries and a coconut cream, plus it’s loaded with market fresh berries, and feeds a crowd.
Carrot Cake – And last but certainly not least carrot cake!

I am so not prepared for Easter yet. And worst yet, I kind of just want to make everything on this list.
I want to do EVERYTHING on the sweet list!!!!
Some parmesan potato stacks followed by some lemon raspberry jam bars would go down an absolute treat!
We made the chocolate chip banana bread during Easter and we just can’t have enough of it.
I’m sad I didn’t see this until today. Luckily I can always have brunch!
