After a bit of an indulgent weekend, I think we can all agree that an epic loaded power salad with tons of fresh produce and a basil vinaigrette is the best way to start the week!

Why I Love This Recipe

In my world, life is really all about balance!! The healthy with the indulgent. The super active days with the lazy days. The yoga clothes with the occasional heels and red lip. It all needs to balance each other out. So after a particularly indulgent few days up in Napa Valley (hello wine, cheese, pizza, carbs, more carbs and cocktails), my body is craving some fresh produce! This power salad is my answer to those weekends. It's loaded with fresh market lettuce, tons of colorful vegetables, my favorite basil vinaigrette and a bit of feta to give it a salty kick! {because we can't just go cold turkey when it comes to cheese!}

I'll be noshing on this all week long so that by the time next weekend rolls around, I won't feel quite so guilty when I hit the town for a decadent meal or happy hour!

Ingredients & Substitutions

Mise en place of all ingredients to make loaded power salad along with a bowl of basil vinaigrette.
  • Lettuce
  • Chickpeas
  • Red Bell Pepper
  • Yellow Bell Pepper
  • Cherry Tomatoes
  • Cucumber
  • Green Onion
  • Feta Cheese
  • Avocado
  • Basil Vinaigrette

How to Make Loaded Power Salad

Step 1: Arrange the greens on on a large serving bowl. Arrange the other ingredients in groups on top of the greens. Serve with basil vinaigrette on the side.

How to Store Loaded Power Salad

This salad is best made fresh and eaten. If you really want to keep prep done, you can keep everything except avocados chopped and ready, and mix everything together when it is time to serve. The basil vinaigrette can be kept in the fridge for 5 days and freezes well too.

FAQs

Can I add a different protein?

Yes! Check out my summer grilled chicken power salad for more inspiration. You can also add other vegetarian proteins like tofu if you prefer that.

I have only cilantro vinaigrette on hand, can I use that?

I think basil vinaigrette goes better with this, but you can use a dressing of your choice!

Ingredients
  

  • 2-3 cups market lettuce any variety will work
  • 1 cup of canned chickpeas drained
  • 1 red pepper bell medium dice
  • 1 yellow bell pepper , medium dice
  • ½ cup cherry tomatoes halved
  • ½ english cucumber chopped or sliced
  • 6 green onions sliced
  • ½ cup feta cheese
  • 1 avocado sliced
  • 1 recipe Basil Vinaigrette

Instructions
 

  • Arrange the greens on on a large serving bowl. Arrange the other ingredients in groups on top of the greens.
  • Serve with the Basil Vinaigrette served on the side

    I love it - This recipe is amazing. Taste is superb as is the presentation. I made it for a church function and received many compliments. Loved the dressing as well. The whole dish is so easy to put together. Make it and you will get rave reviews!
