Why I Love This Recipe

If you've never heard of Tacos de Alambre before - let me give you a bit of background!

Tacos de Alambre are a popular Mexican dish, typically made with a combination of beef and chorizo, bell peppers, onions, cheese, and if you want... bacon. The ingredients are cooked together on a flattop or skillet, then served on soft corn or flour tortillas.

The meat used is usually beef (like ribeye or flank steak), but chicken or pork can also be used. The melted cheese adds richness, while the bell peppers and onions provide sweetness and a bit of crunch. Bacon and sausage, if included, gives the tacos a smoky flavor.

These Tacos De Alambre are hearty, filling, and a great mix of flavors and textures, often served with salsas and fresh lime and lemme tell you guys - I AM OBSESSED!

These have skyrocketed up to the top of my favorites along with my Bean and Cheese Burritos! And also these Chuck Roast Tacos are another fav!

Tips & Tricks

  • Use high-quality meat: Opt for cuts like flank steak or ribeye for beef, or chicken thighs for a juicier option. Season well with salt, pepper, and your favorite spices.
  • Preheat the griddle or pan: Ensure your cooking surface is hot before adding the ingredients to get a nice sear on the meat and vegetables.
  • Cook ingredients in stages: Start by cooking the meat first, then add the vegetables (bell peppers, onions) to prevent overcooking and retain some crunch in the veggies.
  • Use melty cheese: Cheeses like Oaxaca, Monterey Jack, or mozzarella melt perfectly and complement the savory flavors. Add it last to melt over the top of the mixture.

FAQ's

What is Shaved Beef

Shaved beef steak refers to thinly sliced cuts of beef, usually from tougher but flavorful cuts like ribeye, sirloin, or round. The meat is shaved or sliced very thinly, often using a deli slicer or by hand, to create pieces that cook quickly. It's commonly used in dishes like cheesesteaks, stir-fries, or tacos where fast cooking and tender results are needed. The thin slices make it easier to cook evenly and absorb flavors from marinades or seasonings.

What cut of steak works best?

Skirt steak or flank steak are ideal—they cook quickly and stay flavorful.

Can I make this ahead of time?

Yes—cook the filling ahead and reheat in a hot skillet before serving.

How do I keep the steak tender?

Slice against the grain and avoid overcooking.

Can I make this vegetarian?

Absolutely—use mushrooms, peppers, and onions as the base and keep the cheese.

What toppings go best with tacos de alambre?

Cilantro, diced onion, salsa, guacamole, and lime wedges are all great options.

  1. Hi! Your recipe notes say to cook the meat first, then veggies, to keep them crunchy. But in the recipe you cook the veggies first, then add meat. Which do you suggest? Thank you!

  2. Super excited to try this out tomorrow! Everything I’ve ever made from you has had RAVE reviews from friends and my wife. Quick question-it seems like the chorizo sausages are a couple of different sizes. Any chance that you have any guidance on the right amount so that the beef to sausage ratio is correct?
