You know I love a white pizza. It's truly my pizza base of choice. Tons of garlic, olive oil. red pepper flakes... it's my absolute all time favorite! Add to that some caramelized mushrooms, tons of wilted spinach, 2 different kinds of cheese and some lemon juice and it's the fall pizza of your dreams.

The lemon is the icing on the cake so don't skip it!! And the feta adds an extra bite that you wouldn't get from just the mozzarella.

Garlic Mushroom & Spinach Pizza

The perfect earthy Garlic Mushroom & Spinach Pizza with white sauce!! Double the recipe to feed 4!

Ingredients
  

  • ½ pound pizza dough
  • 3 tablespoons olive oil
  • 4 cloves garlic finely chopped
  • 1 cup shredded mozzarella
  • 1 cup feta cheese
  • 5 cups loose leaf bloomsdale spinach
  • 1 recipe wild mushrooms below
  • Red pepper flakes and oregano to garnish
  • Lemon wedges to serve

For the Wild Mushrooms

  • 1 lb wild mushrooms
  • 3 tablespoons olive oil
  • 4 cloves garlic minced
  • 1 shallot sliced

Instructions
 

For the wild mushrooms

  • In a large skillet over medium high heat, heat the olive oil. Add the shallots and sliced mushrooms and sauté for 8-10 minutes until they are soft and starting to caramelize. Season with salt and continue to cook until golden brown, adding the garlic the last minute of cooking. Remove and drain any excess liquid as needed.

For the Pizza

  • Preheat your oven to 500 degrees. Thirty minutes before cooking the pizza, put your pizza stone in the oven.
  • Stretch the dough in a circular motion, then lay them out on a flat surface and flatten out using a rolling pin. If you have a pizza peel, sprinkle some flour on it and place the stretched out dough on the peel.
  • Once your pizza doughs is flat and ready to be cooked, brush the olive oil over the pizza and sprinkle with garlic. Pile with the spinach, leaving a 1 inch crust and scatter with the feta, mozzarella and mushrooms allowing the cheese to fall into the spinach. Season with salt and pepper.
  • Transfer the pizza into the oven and bake until the crust is golden.
  • Remove pizza from the oven. Season with red pepper flakes, and oregano, then slice and serve. Serve with lemon wedges.

Notes

Homemade dough or the ball from the deli counter - both equally delicious!

    We LOVE this pizza so much! We have made it several times and enjoy it more every time! We have used oyster mushrooms and cremini mushrooms, both are good. This pizza doesn’t need to have a sauce or meat, the toppings leave you satisfied. We add extra garlic because you can’t go wrong with garlic and have a crust recipe that is thin and crispy, perfect for this pizza!
