Raise your hand if you have a weakness for all things Ben and Jerry related! I sure do. And one of my biggest weakness is Chunky Monkey.
There is seriously nothing better than curling up on the couch after a long day, watching the Real Housewives of New Jersey, Beverly Hills, New York or whatever else is on Bravo TV, and eating some decadent ice cream. Am I right? 🙂
Well I thought it was high time I made my own version of chunky monkey and I seriously couldn't even believe how easy it was. I decided that not only was I going to add the typical banana with chocolate chunks and walnuts, but it only made sense to crumble up some brownies into this bowl of amazingness. And you know who has the best brownie recipe out there - Elise from Simply Recipes. The brownies on her site are like the brownies to end all brownies. So go ahead and whip up a batch of those, let 'em cool, and the crumble them up and set aside. You might want to make a double batch if you're like me. Because well, I ate half of the first batch before I even had a chance to throw them into my ice cream maker. I have issues. They are totally under control through. And my brownie addiction is just fine with me.
Ok so back to the Chunky Monkey. I didn't realize that it was so easy. It's 4 ingredients: super ripe bananas, sugar, heavy cream and lemon juice. Throw it all into a food processor, whirl that stuff around, throw it into your ice cream maker and call it a day. Seriously, couldn't be easier huh?
So next time you have a craving for the Chunky Monkey - make it at home! You won't be disappointed.
Homemade Chunky Monkey Ice Cream
Ingredients
- 4 ripe bananas frozen and then thawed
- 1 lemon juiced
- 1 ⅔ cups heavy cream
- ⅓ cup sugar
- 1 cup chopped walnuts
- ½ cup chocolate chunks
- 1 cup brownie bits
Instructions
- Combine the bananas, lemon juice, cream and sugar into a food processor and combine for 1 minute until smooth.
- Remove ice cream bowl from the freezer and place into ice cream machine. Transfer banana mixture to the frozen bowl and add the walnuts, chocolate chunks and ½ the brownie bits. Freeze according to the manufactures directions. Carefully stir in remaining brownie bits at the end.
- Remove ice cream from the bowl and place into a freezer safe container for at least 2 hours before serving.
For those who do not own an icecream machine, is there an easy replacement for the ice cream machine?
was wonderful except the juice of one whole lemon kinda made it way too tangy. I will cut down on the lemon juice next time. Otherwise it is a really good recipe.
I'm also gonna add a bit of peanut butter into the mix or coconut cream... think it'll give it that extra factor

For those who can't have bananas for various reasons, a modification could be made by putting ripe mangoes in, and calling it "Chunky Chimp" ice cream, as the lemon will not overpower the taste of mango. I worked before as a chef, and I also have issues with eating bananas, as they are incompatible with the medication I take. As well, monkeys don't just eat bananas, but eat other fruits. Nice recipe!

hello i am from India want to make this but can i use fresh bananas not the frozen and i havent understood why to freeze then thaw the bananas any particular reason for this. hope for the reply.
