What have we all been doing?? We've gone YEARS (a decade really) here on WGC without Tacos De Alambre and it's a travesty. These incredibly flavorful tacos are everything we all love - beef, bacon, cheese, veggies and tortillas, mixed together to make a perfect bite. Make these IMMEDIATELY!



 

Why I Love This Recipe

If you've never heard of Tacos de Alambre before - let me give you a bit of background!

Tacos de Alambre are a popular Mexican dish, typically made with a combination of beef and chorizo, bell peppers, onions, cheese, and if you want... bacon. The ingredients are cooked together on a flattop or skillet, then served on soft corn or flour tortillas.

The meat used is usually beef (like ribeye or flank steak), but chicken or pork can also be used. The melted cheese adds richness, while the bell peppers and onions provide sweetness and a bit of crunch. Bacon and sausage, if included, gives the tacos a smoky flavor.

These Tacos De Alambre are hearty, filling, and a great mix of flavors and textures, often served with salsas and fresh lime and lemme tell you guys - I AM OBSESSED!

Ingredients & Substitutions

  • Red Bell Pepper
  • Yellow Bell Pepper
  • Yellow Onion
  • Jalapeno
  • Dalkin&Co Taco seasoning
  • Shredded mozzarella cheese (or your favorite melting cheese)
  • Small street-style corn tortillas
  • Lime wedges and fresh cilantro, or other favorite toppings

How to Make

In a skillet over medium heat, cook the bacon until the fat renders and it becomes crispy. Remove the bacon and drain it on a paper towel-lined plate. Crumble and set aside.

In the same pan, add the chorizo. Break it apart with a spoon as it cooks, letting it cook through completely (about 5-7 minutes).

Add the diced peppers and onion to the pan. Cook until the onions turn translucent and the vegetables are halfway cooked, about 10-15 minutes.

Stir in the Dalkin&Co Taco seasoning, mixing well to combine.

Add the shaved beef to the skillet, cooking until it is fully cooked (about 5 minutes).

Stir the crumbled bacon back into the pan, then top with shredded cheese. Cover the skillet and let the cheese melt over the mixture.

Serve the Tacos De Alambre mixture straight from the skillet with warm tortillas. Garnish with lime, cilantro, or your favorite toppings.
