Easy 30-Minute Cheeseburger Sliders

These sheet pan Cheeseburger Sliders are next level! They're perfect for game day, potlucks, or spring / summer barbecues. Pair it up with garlic wedges and loaded guacamole for a great game day menu! And I'm sharing a few of my tips and tricks to making the most juicy, cheesy and flavorful sliders. I promise this easy Cheeseburger Sliders recipe will be you're new go-to burger.

Why I Love This Recipe

Between Formula 1, March Madness, and The Masters there are a lot of opportunities for game day parties. That's where these Cheeseburger Sliders come in. They are the perfect bite-sized food to feed a crowd. And I love that I can throw the ground beef into one pan in the morning, assemble the slider buns in the afternoon and then add the ground beef right before throwing it all in the oven when it’s time to eat. It takes absolutely zero concentration which is exactly what I need when I'm hosting.

If you are planning ahead and want a change, you can also make pulled pork sliders that requires slow cooking the pork.

Substitutions

Slider Buns - Brioche buns or Hawaiian rolls are my favorite slider buns to use. Dinner rolls would also work for this recipe.

Ground Beef - I use 80/20 for my burgers but if you want something more lean 90/10 will also work.

Cheese - I like using two kinds of cheese for this Cheeseburger Sliders recipe one that's sliced and one that's shredded. The different textures lends to a better cheese pull and gooey pools of cheese in every bite. I'm using cheddar because it melts beautifully but you could also use Monterey Jack, Pepper Jack, Colby Jack, or anything similar instead. If you only have sliced cheese or only shredded that's also fine just use the same one on the bottom and top cheese layers.

  • Slider Buns - I like using brioche buns or Hawaiian rolls
  • Ground Beef - I like to use 80/20 for burgers
  • Condiments - ketchup, yellow mustard, and the best homemade special sauce
  • Cheese - I'm using two kinds here, slices of sharp cheddar cheese and shredded Colby Jack cheese

How to Make Cheeseburger Sliders

Step 1: Start by preheating your oven to 350° F. Next slice the slab of slider rolls in half horizontally, keeping them attached as much as you can. Place the bottom of the rolls on a baking sheet.

Step 2: Then get started on the ground beef mixture. Add the ground beef to a skillet and cook until browned, breaking it apart into small crumbles. Stir in the seasonings until combined. and set aside.

Step 3: Start assembling your Cheeseburger Sliders. Place the cheese slices on the bottom layer of the slider buns.

Step 4: Top that with the ground beef mixture.

Step 5: Drizzle on the special sauce.

Step 6: Sprinkle with the shredded cheddar cheese.

Step 7: Top with the slider buns, brush with a touch of olive oil. Bake the Cheeseburger Sliders for 10 to 15 minutes, until the cheese is melted.

Step 8: Mix all the ingredients for the special sauce in a bowl and whisk.

Step 9: Serve immediately with your favorite burger condiments and more homemade special sauce.

How to Store Cheeseburger Sliders

I recommend storing the ingredients separately. You can keep the sauce in the fridge for 5-6 days and that also allows you to make it ahead. The cooked ground beef can be stored in an airtight container and using it within 3-4 days. Make sure to warm it through well before using.

How to Freeze Cheeseburger Sliders

You can freeze the ground beef mixture for up to 4 months. Once cooled, place it in freezer bags (recommend dividing up portions if you plan to use in parts). Depending on what you plan to use it for, you can thaw this overnight in the fridge or put it directly in the chili / sauce and it will thaw there.

Tips & Tricks

  • I like to line the bottom slider buns with a slice of cheese. This locks in any juices so they don't soak the bun as it bakes preventing soggy Cheeseburger Sliders.
  • Bake the sliders uncovered. If you cover them with foil they will steam instead of getting nice and toasty.
  • Make the house sauce up to 3 days ahead of time. Keep refrigerated in an air-tight container until ready to use.

Ingredients
  

For the Sliders:

  • 12 slider buns such as brioche buns or Hawaiian rolls
  • 1 pound ground beef
  • 2 teaspoons garlic powder
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly cracked black pepper
  • ¼ cup Special sauce (recipe below)
  • 6 slices cheddar cheese
  • 1 cup freshly grated colby jack cheese

For the Special Sauce:

  • ¼ cup mayonnaise
  • 1 tablespoon ketchup
  • 1 tablespoon sweet pickle relish
  • 1 teaspoon red wine vinegar
  • kosher salt and freshly cracked black pepper to taste

Instructions
 

For the Sliders:

  • Preheat the oven to 350° F.
  • Slice the entire slab of slider rolls in half horizontally. Place the bottom of the rolls on a baking sheet.
  • Heat a large skillet over medium heat. Add the ground beef and break up with the bottom of a wooden spoon, crisping up until browned. Stir in the seasonings and let cook for about 8-10 minutes until crispy. Remove from the heat.
  • Place the sliced sharp cheddar on the bottom layer of the slider buns and then carefully transfer the ground beef mixture on top of the cheese. Drizzle the house sauce on top of the beef and then sprinkle with the shredded cheese. Top with the top slab of slider buns. Brush with a touch of olive oil.
  • Transfer the baking dish with the sliders into the oven for 10 to 15 minutes, until the cheese is melted. Serve immediately alongside ketchup, mustard, relish etc.

For the Special Sauce:

  • Whisk all ingredients together until smooth. Taste and adjust seasoning as needed.
